There are millions, and no i am not exaggerating. If I just mention a few, you can sometimes mix them together to produce millions of different combinations. Here are some variations :
Draw poker
Stud
Texas Hold em
Open draw (when you change the cards the ones you get are delt face up instead of down)
Low poker (lowest hand wins not highest)
Wild cards, you could play 2`s wild for example, but you can play "lowest card in your hand is wild" so everyone will have at least one wild card
Reverse poker, play poker but put your hand on your forehead so everyone can see what you got, except for you, in this game you bet on the weakness of other players hands instead of the strength of your hand.
Its really easy to invent your own variations, an odd one which works for three players is 2nd hand wins, so its not normal poker or low poker.
You can literally play with any number of cards as long as it is decided before the deal, eg Hold em with three hole cards instead of two.
When in Wolverhampton we used to play dealers choice, so the version would keep changing throughout the night.
